Rice Burgers

Lunch and Sandwiches

Ingredients:

  • 2 Cups rice, cooked (instant rice or leftover rice)
  • 1/2 Cup bread crumbs
  • 1 Cup mixed vegetables, finely chopped (celery, carrots, squash, broccoli, etc.)
  • 1/3 Cup Oil
  • Salt and pepper to taste
  • Instructions:
    Mix rice, vegetables, seasonings and bread crumbs together. Form into patties. Brown in oiled frying pan for 5-10 minutes on each side Variations: Add 1 or 2 eggs. Instead of rice, use barley. Add onions.

    Serves: 4
